Have you heard of Chia seeds? Besides this awe
fulsome 80’s commercial, I had never heard of them, but recently they’ve made their comeback as a superfood!
They are high in protein, fibre, Omega-3, and help reduce risk of heart disease. No wonder it’s known as a superfood!
Because it doesn’t have any flavour of its own, and thickens any liquid it’s soaked in, it’s perfect as an egg replacement for this yummy chocolate pudding recipe!
This recipe contains no processed sugar, flour or high cholesterol eggs, so it’s not only healthy, it’s vegan and gluten free!
And it’s just 175 calories for one whole cup!
You will need
~ 2 table spoons unsweetened Cocoa Powder (The darker, the healthier) – 30 cals
~ 150ml Almond Milk (Oat/Soy/Coconut take your pick, my vegan pals!) 25 cal
~ 1 table spoon Honey (Or any low cal sweetener of your choosing) – 60 cals
~ 1 table spoon Chia Seeds – 60 cals
~ Chopped up Almonds and Walnuts (optional)
Let’s get our Chocolate on!
~ Warm up your milk in the microwave for 30-40 seconds. Cocoa doesn’t like to mix with cold milk, this will help you get the job done faster!
~ Put a table spoon of chia seeds into the cup/bowl/fancy mason jar, that you want the pudding to set in.
~ Pour the chocolate milk over the chia seeds, so as to easily soak them. Mix really well, until very few seeds remain floating on top.
~ Pop your Mix into the fridge. Check on it after 30 minute intervals and give it a good stir each time. The seeds should gradually soak up the liquid and turn it into a pudding like consistency!
~ Leave it in for 2-3 hours or even overnight! The longer you leave it to set, the thicker the consistency will be!
~ Optional Step ~ Garnish with some chopped up nuts if you like!
